Purslane is one of the most adaptable plants, capable of growing in poor, compacted soils, garden beds, sidewalks, and even gravelly areas, making it one of the most widespread wild edibles on the planet. In summer, it produces tiny yellow flowers that open in bright sunlight and last only a few hours, followed by small capsules containing numerous black, shiny seeds that ensure rapid self-seeding and persistence in disturbed soils. Its mildly tart, lemony flavor makes it a popular ingredient in salads, soups, and stir-fries. Ecologically, purslane serves as a pioneer species that helps stabilize soil and retain moisture in arid environments.
