Did you know that chipotle peppers are dried and smoked jalapeno peppers?  This classic, medium-heat chili pepper is a staple in Mexican and Tex-Mex cuisine, perfect for salsas, pickling, stuffing, grilling, or adding a kick to any dish. Jalapeños start off green and ripen to a deep red, developing a slightly sweeter flavor. These productive plants thrive in warm, sunny conditions and should be started indoors 8-10 weeks before the last frost. Transplant into well-draining soil, keep evenly watered, and enjoy a continuous harvest throughout the season. Pick them early for a crisp, mild heat or let them fully ripen for a deeper, spicier flavor. Jalapenos have a Scoville rating of 2,000-5,000. They are usually harvested in the green stage and either used fresh, pickled, or dried. Wait for them to turn completely red if you want to dry/smoke them for chipotle peppers. 

Peppers are slow to germinate and slow to start growing to transplant size. I recommend to start seeds in pots/trays with a heat mat to speed up germination. Then start fertilizing weekly with half strength fertilizer once the first set of true leaves appear. Peppers are similar to tomatoes in that they like plenty of water and are heavy feeders. 

Peppers are perennial plants and can produce for several years if taken care of. In cold climates trim off all the leaves and bring in doors in a pot to over winter. Place back out doors once temperatures are nice and warm. In mild climates, pepper plants can be left out doors and might need to be covered on the coldest nights.

Germination: 10-14 days

Germination Temperature: Optimum soil temperatures are 75-85ºF

Seed Sowing Depth: 1/4” deep

Sowing: I highly recommended to start seeds in pots/trays as described above.

Harvest: Can be harvested at any color stage from green to red. It is said they have the best flavor in the green stage.
